For the donuts
- 2 cups whole spelt flour
- ½ cup organic cane sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 ½ tsp cinnamon
- ¼ tsp nutmeg
- Pinch of salt
- 1 1 Autumn Glory apple , peeled, cored and diced
- 1 tbsp filtered water
- 1 ½ cups unsweetened soy milk
- 2 tsp apple cider vinegar
- 2 tbsp avocado oil
For the icing
- 1 ½ cups icing sugar
- 2 tbsp unsalted vegan butter , melted
- 2 tbsp full fat coconut milk
- ¼ tsp almond extract , or more to taste
- Vegan sprinkles , for garnish & optional
