Chocolate Covered Cherry Cashew Truffles

Cherry Cashew Truffles

Made with freeze dried cherries, cashews hemp hearts, almond butter and dates, these truffles are deliciously rich and decadent. They are perfect as an edible gift to offer a love one or yourself!

Ingredients

  • 1 bag of Karen’s Naturals Just Cherries (or 57g of freeze dried cherries)
  • ½ cup roasted unsalted cashews
  • 2 tbsp hemp hearts
  • Pinch of sea salt
  • 3 tbsp almond butter
  • cup pitted and packed medjool dates
  • 100 g dark chocolate (70% or higher)

Recipe

  1. Step 1

    Reserve two tablespoons of Karen’s Naturals Just Cherries.

  2. Step 2

    In a food processor, process the rest of the freeze dried cherries until a powder is formed.

  3. Step 3

    Add cashews, hemp hearts and salt and process until a coarse sand texture is achieved.

  4. Step 4

    Add almond butter and dates and process until sticky. If the mixture is not sticking together, add more almond butter, one teaspoon at a time, processing between additions.

  5. Step 5

    Scoop out tablespoon amounts of the mixture and carefully form into balls using your hands. Set on a parchment-lined large plate. There should be about 12 to 14 truffles. Place in the fridge to set for 15 minutes.

  6. Step 6

    In the meantime, using a double boiler, melt dark chocolate.

  7. Step 7

    Using a mortar and pestle or your food processor, crush the remaining 2 tablespoons of dried cherries a few times. Set aside.

  8. Step 8

    Once the chocolate has melted, remove the truffles from the fridge. Drop the truffles, one at a time, in the melted chocolate.

  9. Step 9

    Using a fork, remove from the chocolate, letting the excess chocolate drip off. Carefully place back on the parchment-lined plate. Repeat with the rest of the truffles.

  10. Step 10

    Top each truffle with the crushed cherries and transfer to the fridge until the chocolate has set completely.

Common Questions & Swaps

  • Before rolling into balls, taste the mixture and if you prefer your truffles to be on the sweeter side, add 1 or 2 additional dates. Process once more.
  • Replace the freeze dried cherries with any other freeze dried berry of choice. Note that if you opt for cranberries, you might have to use more dates. 
  • No almond butter? Swap it out with cashew butter or tahini. I would suggest not using peanut butter as its flavor will overpower the rest of the ingredients.
