Oil Free Peanut Butter and Banana Granola

Serves 12

Customizable, oil free, delightfully crunchy, and lightly sweet, this granola is the perfect topping for your smoothie bowls, chia puddings, or as a snack along with plant based milk.

Ingredients

  • 3 cups old fashioned oats
  • ¼ cup pepitas
  • ¼ cup walnuts , chopped
  • 1 tsp ground cinnamon
  • ¼ tsp sea salt
  • 2 ripe bananas , mashed
  • cup natural peanut butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract

Recipe

  1. Step 1

    Preheat oven to 300ºF and line a baking sheet with parchment paper.

  2. Step 2

    Add oats, pepitas, walnuts, cinnamon and salt to a large bowl and stir. Set aside

  3. Step 3

    Add mashed bananas, peanut butter, maple syrup and vanilla extract to a small saucepan and heat over low heat.

  4. Step 4

    Using a spatula, mix the wet ingredients together until you have a homogeneous puree.

  5. Step 5

    Pour the wet ingredients onto the dry ingredients and mix until evenly coated.

  6. Step 6

    Transfer to parchment-lined baking sheet and spread evenly, making sure the granola is well compacted.

  7. Step 7

    Bake for 20 minutes. Stir the granola around so that the outside edges are moved to the middle and the middle chunks are moved to the outside. If you want a chunkier granola, be more gentle with the stirring, keeping some larger chunks intact.

  8. Step 8

    Bake for another 20 minutes.

  9. Step 9

    Remove from the oven and let cool completely before transferring into an airtight container.

    Enjoy as is, with plant based milk or on smoothie bowls and chia puddings.

Common Questions & Swaps

Feel free to swap out the pepitas and walnuts for your favorite nuts or seeds. Simply make sure to use 1/2 cup total of nuts/seeds. If you are using larger nuts like almonds, cashews, or hazelnuts, chop them up into pieces before adding to the mix.
