Pear and Caramelized Shallots Flatbreads
In this recipe, store bought naan breads are topped with tangy vegan goat cheese, sliced bosc pears, caramelized shallots, and a drizzle of balsamic vinegar. These sweet and savory flatbreads make a wonderful snack or meal when you are short on time.
Ingredients
- 1 tbsp unsalted vegan butter

Recipe
- Step 1
Preheat the oven to 400ºF.
- Step 2
Melt the butter in a medium-sized pan over medium heat.
- Step 3
Add sliced shallots and cook for 3 minutes, or until the shallots have softened and they begin to brown.

Reduce the heat to low and cook for 10 minutes or until the shallots are brown in color and really soft. Stir regularly using a wooden spoon.

Drizzle with maple syrup and sprinkle in fresh thyme. Stir and cook for 1 minute.

Season generously with salt and pepper and remove from the heat.
- Step 7
Spread vegan goat cheese on two naan breads. Top with caramelized shallots and sliced pears.

Place directly on the oven rack and bake in the oven for 7 minutes or until the naan breads are beginning to crisp and the vegan cheese has softened.

Remove from the oven and drizzle with balsamic vinegar. Enjoy immediately.

Can I swap the vegan butter? Yes, you can use olive oil instead.

What if I don’t have shallots? Simply use half a medium yellow onion instead.

Can I use another sweetener instead of maple syrup? I have personally not tried it, but I would say that brown sugar would work well here. However, just use 1 teaspoon of it as the sweetness of brown sugar is more pronounced than maple syrup.

Can I replace thyme with another herb? I think that fresh oregano would work well in this recipe. Avoid any kind of dried herbs here. If you don’t have thyme or oregano, simply omit that ingredient.

Can I use another type of pear? You could use Anjou pears instead, just be sure they are not overly ripe, as you do not want to end up with soggy flatbreads.
