Quebec Inspired Smoky Maple Chickpea Burger

Made with chickpeas and brown rice, this epic summer burger features deliciously smoky maple bbq sauce, savory tamari, chili flakes for a nice spicy kick. It is also packed with caramelized onions and fresh veggies: tomato, red onion, and cucumber.

Ingredients

Smoky Maple Patties

  • 1 19oz can chickpeas , rinsed and drained
  • 1 cup cooked and cooled brown rice
  • 2 tbsp maple flavored bbq sauce
  • 2 tbsp minced dried onion
  • 1 tbsp tamari or low sodium soy sauce
  • 1/2 tsp mustard powder
  • 1/4 tsp chili flakes
  • 1/4 tsp smoked paprika

Caramelized Mushrooms

  • 1 tbsp neutral oil (such as avocado or canola)
  • 1 8oz pack button mushrooms , sliced
  • 2 garlic cloves , minced
  • 1/2 tsp dried thyme
  • 1/4 tsp sea salt
  • 1/4 tsp freshly cracked black pepper
  • 2 tsp maple syrup

Other Ingredients

  • 4 burger buns
  • Yellow mustard
  • Vegan mayo
  • Sliced red onions
  • Sliced tomatoes
  • Sliced cucumber
  • Fresh greens (frisée, arugula, or Boston lettuce)

Prepare the patties

  1. Step 1

    Add chickpeas to a food processor and pulse until a thick paste texture is obtained, with a few small chunks remaining.

  2. Step 2

    Transfer into a large bowl alongside the cooked brown rice, bbq sauce, minced dried onion, tamari or soy sauce, mustard powder, chili flakes, and smoked paprika. Mix using a silicone spatula until well incorporated.

  3. Step 3

    Line a plate with parchment paper and set aside.

  4. Step 4

    Use a measuring cup to measure out 1/2 cup of the burger patty mixture. Form into a patty using your hands and transfer onto the parchment lined plate.

  5. Step 5

    Repeat to form 4 patties in total.

  6. Step 6

    Place in the refrigerator to set for 30 minutes.

Make the Mushrooms

  1. Step 1

    Heat a large pan on medium-high heat along with oil.

  2. Step 2

    Drop in the mushrooms and cook until brown in color.

  3. Step 3

    Decrease the heat to medium and drop in minced garlic, thyme, sea salt, and pepper. Cook for 1 minute.

  4. Step 4

    Pour in the maple syrup and cook until caramelized. Remove from the heat immediately.

Assemble

  1. Step 1

    Remove the burger patties from the fridge and heat a large non-stick pan over medium heat. Melt vegan butter and spread it uniformly into your pan.

  2. Step 2

    Gently place the patties into your pan—you might only be able to fit 2 or 3 of them as you want to give yourself enough room to flip them. Cook for 5 minutes or until brown in color.

  3. Step 3

    Flip and cook for another 3-5 minutes. Set aside and repeat the process with the rest of the patties.

  4. Step 4

    Heat up your burger breads by putting them in the oven at 400ºF for 1-2 minutes or by spreading a bit of butter onto the inside of each half and grilling them on a pan until golden.

  5. Step 5

    Assemble each burger by spreading some vegan mayo and mustard onto the burger bread halves.

  6. Step 6

    Add a smoky maple patty and garnish with sliced red onions, tomato slices, sliced cucumber, and fresh greens.

  7. Step 7

    Enjoy alongside roasted potatoes.

Common Questions & Swaps

  • Can I use other beans instead of chickpeas? A good replacement for this recipe would be white beans.
  • Feel free to use gluten-free buns.
  • Replace the button mushrooms with oyster mushrooms or shiitakes.
