Strawberry Shortcake Popsicles

These popsicles make for a wonderful summer dessert. They are creamy, rich and sweetened to perfection.

Equipment

Ingredients

Vanilla Cake

  • ⅛ cup + 1 tbsp all-purpose flour
  • ¼ tsp baking powder
  • Pinch of sea salt
  • cuup unsweetened soy milk
  • 1 tbsp maple syrup
  • 1 tsp melted unsalted vegan butter
  • 1 tsp vanilla extract

Roasted Strawberries

  • 1 heaping cup fresh strawberries , rinsed, hulled and quartered
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • Pinch of sea salt

Cream

  • 1 ½ cup coconut cream (I used this one)

Prepare the vanilla cake

  1. Step 1

    Add flour, baking powder and salt into a bowl. Mix to combine.

  2. Step 2

    Incorporate milk, maple syrup, melted butter and vanilla. Mix until homogeneous.

  3. Step 3

    Grease a cup with a bit of melted butter or coconut oil.

  4. Step 4

    Transfer the mixture into your greased cup.

  5. Step 5

    Bake in the microwave for 1 minute.

  6. Step 6

    Remove from the microwave and let cool completely.

Prepare roasted strawberries

  1. Step 1

    Preheat oven to 375ºF and line a baking sheet with a silicone mat or parchment paper.

  2. Step 2

    Toss strawberries, maple syrup, vanilla extract and salt together in a small bowl.

  3. Step 3

    Transfer onto your prepared baking sheet.

  4. Step 4

    Bake for 20 minutes. Let cool.

Prepare the cream

  1. Step 1

    Add coconut cream, vanilla and maple syrup into a bowl. Mix to combine.

Assemble

  1. Step 1

    Divide strawberry quarters between 6 popsicle molds. Try not to add too much of the strawberry juice into your molds to prevent your popsicles from being too icy.

  2. Step 2

    Cover with the cream mixture, leaving a bit of extra room for the vanilla cake. Swirl slightly. Insert wooden sticks or spoons.

  3. Step 3

    Place in the freezer for 1 hour.

  4. Step 4

    After one hour, add chunks of vanilla cake and return in the freezer until set.

Common Questions & Swaps

  • Can I use coconut milk? If it is a high quality coconut milk, put your can in the fridge. Refrigerate overnight and scoop out the right amount of cream and use that. If your coconut milk does not separate, just mix it well and use it in your recipe. Your pops will just not end up as creamy, but they will still be super tasty.
  • Can I swap the strawberries with other berries? Yes. I have not tested this recipe with other berries, but I would suggest that if you do use other berries, skip the roasting step and cook them in a saucepan with maple syrup for a few minutes until you obtain a compote.

  • Can I skip the microwave cake? If you have a vanilla cake on hand or even cookies, feel free to use those instead or simply leave out that component of the recipe.
