Chai Latte Scones

Serves 6

Rich and satisfying, these fall-inspired scones feature organic chai latte yogurt from Le Grand as well as a sweet and spiced glaze.

Ingredients

Scone Dough

  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 2 tbsp organic cane sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 5 tbsp unsalted vegan butter , divided
  • 3/4 cup plus 1 tbsp Le Grand’s Chai Latte vegan yogurt

Spiced Glaze

  • 1/2 cup icing sugar
  • 1 tbsp Le Grand’s Chai Latte vegan yogurt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground cardamom
  • 1/8 tsp ground ginger

Prepare the Scone Dough

  1. Step 1

    Mix together the two flours, the organic cane sugar, the baking powder, and the sea salt in a large mixing bowl using a fork.

  2. Step 2

    Using your fork, incorporate 4 tablespoons of vegan butter until you obtain a sandlike mixture.

  3. Step 3

    Fold in Le Grand’s Chai Latte vegan yogurt and form a ball with the dough. Wrap in a plastic wrap and refrigerate for 1 hour.

  4. Step 4

    After 1 hour, preheat the oven to 375ºF, line a baking sheet with parchment paper, and melt the remaining 1 tablespoon of vegan butter.

  5. Step 5

    Flatten the dough into a 10 inch disk. Cut into triangles, transfer them onto the parchment-lined baking sheet and brush with vegan butter.

  6. Step 6

    Bake for 18-20 minutes or until golden brown. Broil at 500ºF for 1-2 minutes to add extra color to them.

  7. Step 7

    Remove from the oven and let cool completely on a cooling rack before glazing.

Prepare the Glaze and Assemble

  1. Step 1

    Prepare the glaze by mixing all the glaze ingredients into a bowl until smooth. Drizzle the glaze onto the cooled scones and let set for 10 minutes before enjoying.

This recipe was created specifically with Le Grand’s Chai Latte vegan yogurt, therefore, I unfortunately cannot guarantee that using another yogurt will result in equally tasty scones.

These scones are great for a weekend baking adventure. Since they require some resting and cooling time, you can prepare the dough and set it in your fridge, while you go on a lovely walk in nature or cozy up with a book.
