- 1/3 cup raw pumpkin seeds
Dressing
- 2 tbsp plus 2 tsp lemon juice
- 2 garlic cloves , grated
- 2 tsp dijon mustard
- 2 tsp maple syrup
- 2 tsp extra virgin olive oil
- 1/4 tsp smoked paprika
- 1/4 tsp sea salt
- 1/4 tsp freshly cracked black pepper
Salad
- 2 pounds Brussel sprouts , trimmed
- 3 tbsp extra virgin olive oil
- 1 large shallot , halved through the root end and thinly sliced
- 2 tsp tamari
- 1/3 cup pomegranate seeds
