Spicy Tuna Poke Bowl

Serves 2

Packed with delicious fresh veggies and 100% plant based, this poke bowl is super quick to put together and is a wonderful alternative to salads.

Ingredients

  • cup cooked sushi rice , basmati rice or coconut rice
  • ½ cup cooked and shelled edemame beans
  • 2 portions of Watermelon Vegan Tuna with Spicy Mayo Sauce (make the entire recipe)
  • ½ English cucumber , sliced
  • 1 avocado , halved, pitted, and sliced
  • 6 red radishes , thinly sliced
  • 2 tbsp toasted coconut flakes , for garnish
  • Green onions , sliced, for garnish
  • Black and white sesame seeds , for garnish

Recipe

  1. Step 1

    Prepare all your veggies and have all your ingredients as well as two bowls ready.

  2. Step 2

    Divide rice, edemames, and vegan tuna between two bowl.

  3. Step 3

    Garnish both bowls with cucumber slices, avocado halves and radishes.

  4. Step 4

    Top with toasted coconut flakes, green onions and sesame seeds.

  5. Step 5

    Enjoy immediately.

Common Questions & Swaps

  • Can I make this without the Watermelon Vegan Tuna with Spicy Mayo Sauce? You could, but you would have to then create some sort of sauce for your veggies. I find that because the vegan tuna has such a strong flavour, you don’t need to add any other flavour boosters to these poke bowls. However, without it, you would just end up with rice and veggies.
  • Can I mix up the veggies? Totally, add what you have on hand! Carrot ribbons would be great and so would shredded purple cabbage, sliced bell peppers, sprouts and even pickled ginger.

  • Can I switch up the rice with something else? Absolutely. In poke bowls, I personally prefer white rice and that is why I suggested in the ingredients to use either cooked sushi rice, basmati rice or coconut rice, but you can definitely switch those up with rice noodles, soba, quinoa, brown rice etc.

It is quite funny that I am sharing this recipe for a super healthy, super colorful veggie forward poke bowl, when the past week has been all about brown foods hahaha!

I have not been super inspired to eat veggies to be honest! Although I know now is the time to do so since it is the summer and fresh local fruits and veggies are abundant… But for some reason, I am not feeling them as much.

I have been much more in the mood for desserts, tofu, pasta, naan and roasted potatoes than I have been for fresh veggies.

In the end, I know it is just a little phase, because I always do get back to eating more veggie forward dinners, even after periods when I don’t.

Anyways, enough rambling about that! Let’s talk about this gorgeous poke bowl that I believe you need in your life.

If you haven’t tried my recipe for Watermelon Vegan Tuna with Spicy Mayo Sauce, please do! It is the key component of this bowl and is pretty much the ultimate flavour booster here. Also, because watermelon itself is not nearly as filling as regular fish, I decided to add some protein to this bowl with edemames. These not only make this poke bowl more filling but they also add a lovely texture.

This Vegan Spicy Tuna Poke Bowl is packed with lots of super crispy, super fresh veggies. It gets a touch of richness from the coconut flakes and the sesame seeds, which also add a nice depth of flavour.

Lastly, a poke bowl could not be complete without avocado. Its creaminess is a must here!
