Carrot Cake Balls

Carrot Cake Bites

These nutty, gooey, spicy carrot cake bites feature many of the ingredients found in a traditional carrot cake, but are packed in small bite-sized snacks.

Ingredients

  • ¼ cup soaked raisins (soak them in advance in boiling water for 15 minutes)
  • 1 cup shredded carrots
  • ½ cup toasted walnuts
  • 2 medjool dates , pitted
  • cup hemp hearts
  • cup unsweetened grated coconut , plus more for rolling
  • 2 tbsp ground flax or chia seeds
  • 2 tbsp coconut flour
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp fresh grated ginger , optional

Recipe

  1. Step 1

    Drain the raisins and squeeze them with your hands to get as much water out as possible.

  2. Step 2

    Place them, along with the rest of the ingredients, into a food processor. Process until all the ingredients are fully combined and a dough is formed.

  3. Step 3

    Using a tablespoon, scoop out the dough and roll into a ball using your hands.

  4. Step 4

    Roll each ball in additional grated coconut until covered.

  5. Step 5

    Transfer to an airtight container and chill for at least 2 hours before eating. Keep in the refrigerator for 1 week.

Common Questions & Swaps

  • Feel free to swap out the walnuts with toasted pecans.
  • Do not replace the coconut flour with another nut flour.
