The Best Oil Free Vegan Chocolate Microwave Cake

Ready in under 5 minutes and requiring only 10 ingredients, this oil free vegan chocolate microwave cake is fudgy, rich, chocolatey, nutty and sweetened to perfection.

Ingredients

  • 2 tbsp whole wheat flour
  • 1 tbsp + 2 tsp cacao powder
  • 1 tbsp tigernut flour
  • ¼ tsp baking powder
  • Pinch of sea salt
  • 3 tbsp unsweetened soy milk
  • 1 tbsp natural nut butter
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp dairy free chocolate chips
  • Melted chocolate , for garnish, optional

Recipe

  1. Step 1

    In a mug, combine flour, cacao powder, tigernut flour, baking powder and salt. Mix using a fork.

  2. Step 2

    Add plant based milk, nut butter, maple syrup and vanilla extract. Mix well until homogeneous.

  3. Step 3

    Fold in dairy free chocolate chips.

  4. Step 4

    Microwave for 1 minute. Let cool slightly and enjoy as is or with melted chocolate on top.

  • Can I replace the whole wheat flour? I have tested this recipe with all-purpose flour with great results and I am pretty positive you would get a delicious cake if you use a GF flour mix. If you end up trying this cake with another type of flour, let me know in the comments below.

  • I don’t have tigernut flour, what can I replace it with? Simply swap it out with almond flour.

  • Can I use any other nut butter? Absolutely! Use any nut butter you have on hand. I have tried this recipe with hazelnut butter, pistachio butter and peanut butter and all were delicious. Just make sure your nut butter is natural and somewhat runny.

  • Can I use any plant based milk? I would say most except canned coconut milk, as it is much more fatty than other milks and might affect the texture of your cake.

There comes a time in your life, when you try a recipe and it instantly becomes one for the books.

You know the kind of recipe you dream about. The kind the of recipe you always crave. The kind of recipe your loved ones ask you to make for them.

This oil free vegan chocolate microwave cake is just that kind of recipe.

One night this winter, I was desperately craving something sweet after dinner and peanut butter stuffed dates could not satisfy my cravings. I was looking for something more… let’s just say decadent.

After a bit of research, I stumbled upon Chocolate Covered Katie’s recipe for One Minute Chocolate Mug Cake. I tried her recipe and was shook! It was so rich and delicious!

Then I started thinking, how could I modify it to reflect more my personal preferences aka, how could I replace the granulated sugar and the oil.

My solution for the sugar was simply using maple syrup and adding some chocolate chips. As for the oil, it was swapping it out for nut butter. I also wanted to create a mug cake that had a little nutty flavour so I decided to replace one of the tablespoons of flour with tigernut flour.

The result was a super fudgy, rich, chocolatey, nutty and sweetened to perfection mug cake that is ready in under 5 minutes. 

I promise you guys this recipe is so good and so addictive. It has literally become my go to dessert since it does not require me using a mixing bowl or measuring cups and is baked in literally 1 minute!

Well on that note, as I have said at the beginning of the article, this oil free vegan chocolate microwave cake is one for the books! It is absolutely one of my favorites to make when I crave something sweet.
