There comes a time in your life, when you try a recipe and it instantly becomes one for the books.
You know the kind of recipe you dream about. The kind the of recipe you always crave. The kind of recipe your loved ones ask you to make for them.
This oil free vegan chocolate microwave cake is just that kind of recipe.
One night this winter, I was desperately craving something sweet after dinner and peanut butter stuffed dates could not satisfy my cravings. I was looking for something more… let’s just say decadent.
After a bit of research, I stumbled upon Chocolate Covered Katie’s recipe for One Minute Chocolate Mug Cake. I tried her recipe and was shook! It was so rich and delicious!
Then I started thinking, how could I modify it to reflect more my personal preferences aka, how could I replace the granulated sugar and the oil.
My solution for the sugar was simply using maple syrup and adding some chocolate chips. As for the oil, it was swapping it out for nut butter. I also wanted to create a mug cake that had a little nutty flavour so I decided to replace one of the tablespoons of flour with tigernut flour.
The result was a super fudgy, rich, chocolatey, nutty and sweetened to perfection mug cake that is ready in under 5 minutes.
I promise you guys this recipe is so good and so addictive. It has literally become my go to dessert since it does not require me using a mixing bowl or measuring cups and is baked in literally 1 minute!
Well on that note, as I have said at the beginning of the article, this oil free vegan chocolate microwave cake is one for the books! It is absolutely one of my favorites to make when I crave something sweet.
