Layered Black Forest Overnight Oats
Ingredients
Cherry Compote
- 1 ½ cups pitted sweet cherries
- ½ tbsp maple syrup
Overnight Oats
- 1 cup old fashioned oats
- 1 ½ cups unsweetened soy milk
- 1-2 tbsp maple syrup
- 2 tbsp whole chia seeds
- ¼ tsp almond extract , or ½ tsp extra vanilla extract
- ½ tsp vanilla extract
- 1 tbsp cacao powder
Garnishes, optional
- Sweet cherries
- Vegan yogurt
- Cacao nibs
- shaved chocolate
Cherry Compote

Recipe
- Step 1
Add cherries and maple syrup to a small pot and cook on medium high for 6-8 minutes, stirring regularly. If the mixture begins to boil, decrease the heat.

Let cool, transfer to a container or mason jar and refrigerate.
- Step 3
Divide oats, milk, maple syrup, and chia seeds between 2 containers.
- Step 4
To one container, add almond extract. Close lid and shake.
- Step 5
To the other container, add vanilla extract and cacao powder. Close lid and shake.
- Step 6
Transfer both containers to the fridge and refrigerate overnight.
- Step 7
The next day, divide cherry compote between 2 serving jars. Top with chocolate oats then regular oats.
- Step 8
Garnish with sweet cherries, vegan yogurt, cacao nibs and shaved chocolate.
Common Questions & Swaps
- Can I make this with another fruit? Yes, it is possible. Because I used cherries in the original recipe and they are so sweet, I didn’t really need much maple syrup in the compote. However if you were using berries instead, you might want to increase the maple syrup to add a bit more sweetness.

What if I don’t have almond extract? You can totally swap it out for vanilla extract like I suggest it in the ingredient list, but know that the almond extract adds another level of depth to this recipe.

I am in a rush, can I shorten the refrigeration time? Ummm maybe by half, but I would not recommend shortening it much more than that. If you want a quicker oat recipe, I would suggest opting for cooked oats.

I love cherries. For me, they are in the same realm as pomegranate. They are a fruit from the gods as I like to call them.
I think my first love for them came from my youth when I would travel with my mom and my brother to visit my grand parents in Ukraine. My grand parents had a pretty big garden where they grew fruits and veggies and one of my favorite things they grew were their dark red, super sweet cherries.
I have a few memories of walking with my grandpa through his garden picking cherries then coming back in and enjoying them together, bonding over our common love for these sweet little gems and the joy they brought us. As they say, those were the days.
