Frozen Peach and Gin Cocktail

Floral, sweet, and refreshing, this vibrant cocktail is perfect enjoyed during the warm summer months.

Ingredients

  • 2 fresh peaches , pit removed, cut into slices, and frozen
  • 1 oz fresh lime juice
  • 1/2 to 1 oz maple syrup , to taste
  • 2 oz Empress 1908 Gin
  • Fresh mint , for garnish
  • Peach slice , for garnish

Recipe

  1. Step 1

    Add frozen peach slices along with lime juice and 1/2 ounce of maple syrup to a high speed blender. Blend until you obtain a thick frozen puree. You might need to use a tamper to help the blending process.

  2. Step 2

    Taste and add more maple syrup if desired. Blend to incorporate.

  3. Step 3

    Pour Empress 1908 Gin in a glass.

  4. Step 4

    Top with frozen peach puree and garnish with fresh mint and a peach slice.

  5. Step 5

    Enjoy on a warm day.

When I was around 12 years old, my friends and I loved heading to the convenience store, called dépanneur in Quebec, and get these maaaassive slushies.

I have absolutely no idea how I could drink such a big amount of overly sweetened frozen liquids. At the place we went to most often, you could mix different flavors together and we loved playing around with the options offered: one day mixing blue raspberry with red raspberry, other days mixing up to 4 flavors together, creating beautiful colorful patterns in our cups.

These memories were truly from another era… Nowadays, I rarely go for slushies actually. My go-to frozen sweets are vegan ice cream or popsicles.

However… Making this frozen cocktail was kind of an ode to those colorful slushy days, with a fun grownup twist.

This drink features frozen sweet and in season Ontario peaches that are blended together with lime juice and maple syrup. This all natural, fruity slushy is poured into a glass with two ounces of Empress 1908 Gin, which creates the most beautiful swirl of colors.

When it comes to the ingredients used in this recipe, below are the ones I used.

Fresh peaches: I find that using packaged frozen peaches in this recipe is not ideal. They tend to not be as sweet and strong in flavor as fresh, in-season peaches. Opting for the latter option and freezing your peach slices results in a more flavorful and sweeter cocktail.

Lime juice: It adds a lovely acidity to balance out the sweetness of this cocktail.

Maple syrup: If your peaches are not as sweet as you’d hoped or if you want your cocktail extra sweet, you have the option to add a natural sweetener to your drink.

Empress Gin: With its floral notes and stunning color, this Canadian gin really elevates the flavor of this grown up slushy.

I love creating recipes inspired by childhood memories! This one was so fun to invent and results in a drink that I think is perfect to sip on all summer long, as you watch the sun set in your backyard or balcony or by the lake.
